Wine and cheese, Canonnau and Pecorino tasting in Dorgali

Canonnau red wine is one of the best known Sardinian wines

This tour is centered around two local products, Pecorino sheep cheese, and the Cannonau red wine that are typical for the Barbagia area. We start the morning with a visit of a working farm, where they have cows and sheep, here we'll get a demonstration how fresh ricotta is made. After the demonstration of cheese making we'll taste some different types of cheeses that they produce on the farm.

Ofcourse with the cheese there is some typical Carasau bread served, also the 'Pane Carasau' is produced on the farm. This is also the first occasion today to taste some local wine, the first one is a special wine, produced only in small quantity, locally they simply call it "white wine". Actually it's a passito wine made from red grapes, with a sweetish taste and a rosé like colour to it. Afterwards the typical red Cannonau can be tasted. Both wines are produced with natural yeast and don't contain any added sulfites.

Next we visit the Oddoene valley

The Oddoene valley is a beautiful valley dotted with small patches of vinyards and olive groves, just south of Dorgali. Due to the mix of soil and the climatical conditions this valley is an excellent terroir where some of Dorgali's most important Cannonau wines are produced.

The vinyard we'll visit has a name for making excquisite quality wines. They cultivate 3 types of red grapes here; Cannonau, Muristellu and Carignano. We'll explain you all about the vinyard before you get the chance to taste 3 different wines.

For lunch we continue to Baddore's typical shepherds hut.

Baddore is sardinian for Salvatore, also Baddore produces his own Cannonau and we'll surely get a chance to try it.

Lunch consists of an appetizer of sausage and olives, as a first course there is a typical dish called Pane frattau, this is made with the Carasau bread, cheese, tomato sauce and an egg. As a side dish there's a salad, and for dessert there are local cakes and coffee.
